I know what you’re thinking. It’s only March – we shouldn’t be eating asparagus yet. But last Monday on my way to work my car told me it was ZERO degrees outside. But by the end of the week there was sun and it was 45 °! So I cooked asparagus and bought some tulips. Sometimes you just have to treat yourself.

And asparagus is the perfect way to treat yourself after the winter we’ve had. Spring is coming so you need to remember how to cook this stuff! This barely qualifies as a recipe considering how simple it is.

I just tossed it with some oil, salt, pepper, garlic and lemon juice. And cheese of course!

Simple Roasted Asparagus

  • Serves 2-4
  • Total Time 15 minutes

Ingredients

1 bunch asparagus, trimmed
3 tablespoons olive oil
1 ½ tablespoons grated Parmesan cheese
1 clove garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon lemon juice

Directions

Preheat oven to 425 degrees F. Trim asparagus ends if necessary. Place asparagus on a baking sheet lined with foil. Drizzle with olive oil, parmesan cheese, garlic, salt and black pepper. Toss until asparagus is evenly covered. Make sure asparagus is in a single layer. Bake for 12-15 minutes, or until tender. Sprinkle with lemon juice before serving.
